Mmm just the scent of fresh chocolate chip cookies is enough to make the tummy rumble, but now you can make these sweet treats even healthier by using coconut oil, instead of butter or margarine. Coconut oil is full of natural saturated fats, which do not clog the arteries or heart. The saturated fat is transported into energy, which can be utilised by the body.

Coconut oil supports the thyroid gland, enhances weight loss, prevents fungal infections, prevents brittle bone disease, supports diabetics, and boosts a healthy immune system. Although coconut oil is healthier than butter or margarine, enjoy these cookies in moderation, like any other sweet treat.

Mix two eggs, three quarters of a cup of raw sugar, two or three cups of coconut oil, two and a quarter cups of spelt or kamut flour, one teaspoon of baking soda, half a teaspoon of sea salt in a food processor until well blended. Finally, add two cups of dark chocolate chips and mix by hand.

Place an average sized spoonful onto a grease proof sheet and bake for twenty to twenty-five minutes, or until the cookies look golden brown. Opt for organic ingredients where possible.
